+ 450 g plain flour
+ 3 tsp baking powder
+ 170 g superfine sugar
+ 2 tsp vanilla flavored sugar (optional)
+ 1/4 tsp almond essence
+ 2 tbsp rum or brandy
+ grated zest of 1 lemon
+ 1/2 tsp mixed spice
+ 2 large eggs
+ 225 g butter
+ 225 g quark soft cheese
+ 110 g currants
+ 110 g raisins
+ 110 g toasted almonds
+ 30 g candied lemon peel
- Sieve the flour, baking powder, sugar and vanilla-flavored sugar together into a large bowl. Mix together the almond essence, rum or brandy, lemon zest, mixed spices and the eggs, and stir into the flour mix.
- Mix the butter and quark together in a small bowl and knead into the dough together with the dried fruit, nuts, and peel.
- Shape into a Stollen (long oval shape) and put onto a light greased baking sheet.
- Bake at 160°C / 300°F gas mark 2 for 30 minutes. Increase the oven temperature to 180°C / 350°F / gas mark 4 and continue to cook for a further 20 minutes. Dust with confectioner’s sugar to serve.
