7-German recipe :: quark stollen

serves 4

+ 450 g plain flour
+ 3 tsp baking powder
+ 170 g superfine sugar
+ 2 tsp vanilla flavored sugar (optional)
+ 1/4 tsp almond essence
+ 2 tbsp rum or brandy
+ grated zest of 1 lemon
+ 1/2 tsp mixed spice
+ 2 large eggs
+ 225 g butter
+ 225 g quark soft cheese
+ 110 g currants
+ 110 g raisins
+ 110 g toasted almonds
+ 30 g candied lemon peel

  1. Sieve the flour, baking powder, sugar and vanilla-flavored sugar together into a large bowl. Mix together the almond essence, rum or brandy, lemon zest, mixed spices and the eggs, and stir into the flour mix.
  2. Mix the butter and quark together in a small bowl and knead into the dough together with the dried fruit, nuts, and peel.
  3. Shape into a Stollen (long oval shape) and put onto a light greased baking sheet.
  4. Bake at 160°C / 300°F gas mark 2 for 30 minutes. Increase the oven temperature to 180°C / 350°F / gas mark 4 and continue to cook for a further 20 minutes. Dust with confectioner’s sugar to serve.
