German recipe :: Obatzter

serves 4

+ 2 ripe camemberts rinds removed
+ 110 g (~ 1/2 c) butter softened
+ 2 onions finely chopped
+ 2 pickles finely chopped
+ 2 tsp paprika
+ 1 tsp caraway seeds
+ salt and freshly ground black pepper
+ 1 packet of crackers

  1. Break up the camembert with a fork and mix into the butter.
  2. Carefully incorporate the onions, pickels, paprika and caraway seeds into the cheese mixture and season to taste with salt and pepper.
  3. Pile into a dish and serve with crackers.

German recipe :: Augsburg Cheese Noodles

Serves 4

+ 400 g plain flour
+ 4 eggs beaten
+ salt and freshly ground black pepper
+ 55 g Emmental cheesegrated
+ 20 g Ramadour cheese (blue cheese)
 
to serve
+ roasted onion rings

  1. Sift the flour into a bowl, add the eggs and salt and knead to form a smooth dough. Spread the mixture onto a lightly oiled tray and cut into strips.
  2. Poach in salted, simmering water for 3-5 minutes. Once the Spätzle float to the surface, lift from the water wiht a slotted spoon and drain.
  3. Arrange the Spätzle in an overproof dish and add the grated cheeses. Sprinkle with the onion rings and back at 350°F for 15-20 minutes. Serve very hot.

German recipe :: Heaven and earth

potato & apple sidedish
Serves 4

This could also be served as a light meal.

+ 2 lbs potatoes peeled and diced
+ 1 1/4 lbs apples or pears peeled, cored and diced
+ soft brown sugar to taste
+ white wine vinegar to taste
+ 3 2/3 oz smoked bacon diced (optional)
+ 1 tbsp oil
+ 1 large onion finely sliced
+ salt and freshly ground black pepper

  1. Cook the potatoes in boiling salted water for 7 minutes, add the prepared fruit and continue to simmer until both are soft. Drain thoroughly and add sugar and vinegar to taste.
  2. Meanwhile fry the bacon in the oil for 7-10 minutes or until crisp, lift onto a plate, set aside and keep warm. Add the onion to the pan and cook over a low heat until golden brown.
  3. Stir the bacon and onion into the potato and apple mixture, season to taste with salt and pepper, and serve hot.

10-German recipe :: Dicker Pickert

Serves 4

+ 4 lbs potatoes
+ 1 oz fresh yeast
+ 1 tsp sugar
+ a little milk
+ 2 eggs beaten
+ pinch of saltl
+ 2 lbs strong plain flour sifted
+ 9 oz raisins washed and dried

  1. Peel, wash and grate the potatoes. Drain off the liquid and dry the potatoes with paper towel.
  2. Stir the yeast and sugar into a little milk until they are dissolved.
  3. Put the potatoes into a bowl and add the eggs, salt, flour, yeast mixture and the raisins. Stir together to form a dough.
  4. Lightly grease a rectangular baking tin and dust with breadcrumbs. Shape ther dough and place in the tin, then cover with a clean cloth.
  5. Leave the baking tin in a warm place to allow the dough to rise to one third more than its original size.
  6. Bake in a oven preheated to 350°-400° F for 1 3/4 – 2 hours. Allow the Pickert to cool in the tin for a few minutes and then turn onto a wire rack.
  7. To serve: cut into thick slices, fry quickly in hot butter, and serve with a cup of coffee.
