+ 1 tsp caraway seeds<br />
+ salt and <em>freshly ground</em> black pepper<br />
+ 1 packet of crackers<br />

<ol>
<li> Break up the camembert with a fork and mix into the butter.</li>
<li> Carefully incorporate the onions, pickels, paprika and caraway seeds into the cheese mixture and season to taste with salt and pepper.</li>
<li> Pile into a dish and serve with crackers.</li>

+ 4 eggs <em>beaten</em><br />
+ salt and <em>freshly ground</em> black pepper<br />
+ 55 g Emmental cheese<em>grated</em><br />
+ 20 g Ramadour cheese (blue cheese)<br />
&nbsp;<br />
<em>to serve</em><br />
+ <em>roasted</em> onion rings<br />
</span></p>
<ol>
<li>Sift the flour into a bowl, add the eggs and salt and knead to form a smooth dough. Spread the mixture onto a lightly oiled tray and cut into strips.</li>
<li>Poach in salted, simmering water for 3-5 minutes. Once the Sp&#228;tzle float to the surface, lift from the water wiht a slotted spoon and drain.</li>
<li>Arrange the Sp&#228;tzle in an overproof dish and add the grated cheeses. Sprinkle with the onion rings and back at 350&#176;F for 15-20 minutes. Serve very hot.</li>

This could also be served as a light meal.<br />

+ 2 lbs potatoes <em>peeled and diced</em><br />
+ 1 1/4 lbs apples or pears <em>peeled, cored and diced</em><br />
+ soft brown sugar <em>to taste</em><br />
+ white wine vinegar <em>to taste</em><br />
+ 3 2/3 oz smoked bacon <em>diced</em> (optional)<br />
+ 1 tbsp oil<br />
+ 1 large onion <em>finely sliced</em><br />
+ salt and <em>freshly ground</em> black pepper<br />
</span></p>
<ol>
<li>Cook the potatoes in boiling salted water for 7 minutes, add the prepared fruit and continue to simmer until both are soft. Drain thoroughly and add sugar and vinegar to taste.</li>
<li>Meanwhile fry the bacon in the oil for 7-10 minutes or until crisp, lift onto a plate, set aside and keep warm. Add the onion to the pan and cook over a low heat until golden brown.</li>
<li>Stir the bacon and onion into the potato and apple mixture, season to taste with salt and pepper, and serve hot.</li>

+ 1 oz fresh yeast<br />

+ 2 eggs <em>beaten</em><br />
+ pinch of saltl<br />
+ 2 lbs strong plain flour <em>sifted</em><br />
+ 9 oz raisins <em>washed and dried</em><br />

<ol>
<li>Peel, wash and grate the potatoes. Drain off the liquid and dry the potatoes with paper towel.</li>
<li>Stir the yeast and sugar into a little milk until they are dissolved.</li>
<li>Put the potatoes into a bowl and add the eggs, salt, flour, yeast mixture and the raisins. Stir together to form a dough.</li>
<li>Lightly grease a rectangular baking tin and dust with breadcrumbs. Shape ther dough and place in the tin, then cover with a clean cloth.</li>
<li>Leave the baking tin in a warm place to allow the dough to rise to one third more than its original size.</li>
<li>Bake in a oven preheated to 350&#176;-400&#176; F for 1 3/4 &#8211; 2 hours. Allow the Pickert to cool in the tin for a few minutes and then turn onto a wire rack.</li>
<li>To serve: cut into thick slices, fry quickly in hot butter, and serve with a cup of coffee.</li>
